Can someone explain the benefit of covering the concrete surface after pour, when the weather is very cold?

One benefit I can think of is when the concrete hydrates, there is heat generation so when you cover it it traps the heat .

    what else?

Also can someone list the most important points to consider when pouring concrete at cold weather? Especially if the weather is below freezing temperature. I know about this subject a little but just seeking opinions
